“Thank you for thinking about us. I would like to tell you a little bit about me and what is important to me and my staff at Gonzales Bistro.
I was born in Mumbai (Bombay), India, and my family emigrated to the U.S. in 1976. Since arriving, I have lived in various localities throughout the east coast and the south. I eventually found my way into restaurant work as a teenager. As a curious and mischievous young man whose love of food was ignited by my mother’s passion and ability, I quickly became a lifer in the restaurant business.
To succeed in a hyper competitive world of restaurants I decided that I must get training that is fine dining focused but grounded so that I can be technically proficient. Ironically, I found my ideal environment by entering the world of an old school apprenticeship under the harshly regimented and unforgiving world run by old, mean, crotchety bastards in the traditional, fine dining French kitchen where either you become emotionally strong with an unyielding work ethic and love of cuisine or you break. Simple as that.
Our cuisine at Gonzales Bistro is deeply personal one for me. It is basically my life on a plate. The dishes are classically French but with an American irreverence. The fact that Gonzales Bistro has no investors or partners tells you that this is my life. And that the success of the restaurant is because of you….our guest.
Too often nowadays, nobody seems to care about the guest’s experience or time or money.
Most places act like they are doing you a favour by you dining there.
For Gonzales bistro our guest’s experience is our number one priority. Period.
Restaurant dining, unfortunately, has become like flying domestically. With tragically poor service standards that are administered by untrained employees whose behavior and attitudes only highlight their willful apathy for the guest’s experience. We train every day to become a worthy liaison between you our guests and the restaurant.
As someone in a bow tie famously said “We are ladies and gentlemen serving ladies and gentlemen” to showcase the pride in a job well done. This is our philosophy.
We are an old school restaurant with an ethos for exceeding our guest’s expectations for food, service and experience. We never forget that graciousness, elegance and personal service is what makes dining out a pleasure.
I cook on the line every single service. If I am not there then we are closed. So please make a reservation to avoid disappointment.
